Growing up in India, Jimmy Aujla first discovered his passion for cooking while volunteering in the kitchen of a Sikh Temple. Surrounded by the warmth and generosity of community meals, he learned early on that food has the power to bring people together in love and friendship.
As a teenager, cooking evolved from a casual pastime into a lifelong pursuit. When Jimmy moved to the United States in 1996, he immersed himself in the family business, honing his craft at their Indian restaurant, Maharaja, in Washington State. Following that success, he traveled to Beaverton, Oregon, to help his family open Taj Palace, and then continued on to Palm Springs, where he launched Monsoon—each experience broadening his understanding of global flavors and hospitality.
After settling in Tucson, Jimmy dreamed of opening an Indian restaurant that celebrated both tradition and innovation. The moment he stepped into the inviting space that is Indian Twist at Swan & Camp Lowell, he knew he’d found the perfect place to share his culinary vision.
Now, at Amore, Jimmy and his team bring together Italian, Indian, and American favorites under one roof—all infused with the passion and devotion that have guided his journey from the temple kitchens of his childhood to today.
“Cooking has always been my love language,” Jimmy says. “I want every dish we serve at Amore to feel like it’s made from the heart, bringing friends and family closer with every bite.”
